A rustic Greek lentil soup that has nourished the country for thousands of years. Made with brown lentils, tomato, garlic, bay leaf, and olive oil, this dish is simple, earthy, and deeply comforting — a true staple of Greek home cooking. Fun fact: Lentils were eaten in ancient Greece long before tomatoes or olives became common. Fakes is still one of the most popular weekly soups in Greek households today.

🥘 FULL POT RECIPE (1 lb brown lentils)

Ingredients — Bean Pot

  • 1 lb brown lentils • 12 cups water • 1–2 cups dehydrated veg OR 3–4 cups fresh veg (tomato, onion, carrot, celery) • 1–2 tbsp tomato paste (optional but traditional) • 1 tsp garlic • 1 tsp onion powder • 1 tsp dried oregano • 1–2 bay leaves • 1 tsp black pepper • Salt to taste • Olive oil (added at the end)

Ingredients — Grain Pot

  • parboiled rice • barley •quinoa 12 cups water • Salt to taste

Pot 1: Fakes (Lentil Soup)

  1. Simmer lentils in 12 cups water for 30–40 minutes until nearly tender.
  2. Add vegetables, tomato paste, garlic, onion powder, oregano, bay leaf, pepper, and salt.
  3. Simmer another 20–30 minutes until thick, earthy, and fragrant.
  4. Finish with a generous drizzle of olive oil.
  5. Optional: Add a splash of red wine vinegar for brightness (traditional).

Pot 2: Rice + Barley + Quinoa

Simmer 35–40 minutes. (If adding quinoa, stir it in during the last 15 minutes.)

Serve

  • Spoon Fakes over rice/barley. quinoa•

Add sprouts or fresh herbs for brightness.
