Fun fact: Despite the name meaning “little bird–style beans,” this dish contains no bird at all — the seasoning was originally used for small game, but beans became the star.
Bean: Cannellini beans Tempering: Not used in Italian cooking.
🍅 FULL POT RECIPE (1 lb cannellini beans)
Ingredients — Bean Pot • 1 lb cannellini beans • 12 cups water • 1–2 cups dehydrated veg OR 3–4 cups fresh veg (tomato, onion, garlic, greens) • 1 tsp garlic • 1 tsp onion powder • 1 tsp paprika • 1 tsp dried sage (or Italian herbs if sage unavailable) • 1 tsp black pepper • Salt to taste
Ingredients — Grain Pot rice • barley • quinoa 3 cups water

Pot 1: Fagioli all’Uccelletto
- Simmer beans 60–90 minutes until tender.
- Add vegetables, garlic, onion powder, paprika, sage, pepper, and salt.
- Simmer 20–30 minutes until fragrant and tomato‑rich.
Pot 2: Rice + Barley + Quinoa add the quinoa about 15 minutes after the rice and barley Simmer 35–40 minutes.
Serve • Spoon Tuscan beans over rice/barley. • Add sprouts for a clean finish.
