A coconut‑based bean stew inspired by the famous Bahian moqueca. Fun fact: Moqueca has African, Indigenous, and Portuguese roots.
Bean: White beans or chickpeas (White beans mimic the softness of moqueca’s fish texture.) Tempering: Not used in Brazilian cooking.
🥥 FULL‑POT RECIPE (1 lb white beans)
Ingredients — Bean Pot
- 1 lb white beans (soaked overnight or simmered longer)
- 12 cups water
- 1–2 cups dehydrated veg OR 3–4 cups fresh veg (tomato, onion, garlic, bell pepper, greens)
- 1 can coconut milk
- 1 tsp garlic
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp black pepper
- Salt to taste
- Optional: squeeze of lime (very Bahian)

🔥 Instructions — Full Pot
Pot 1: Moqueca‑Style Bean Stew
- Simmer white beans 60–90 minutes until tender.
- Add vegetables, garlic, onion powder, paprika, turmeric, pepper, and salt.
- Add coconut milk and lime if desired.
- Simmer 20–30 minutes until creamy, aromatic, and moqueca‑like.
Pot 2: Rice + Barley + Quinoa
Add quinoa in 15 minutes , Simmer 35–40 minutes or until tender and soft
Serve
- Spoon moqueca‑style beans over rice/barley.
- Garnish with sprouts for a clean finish.
