Bean: Mung beans (soft, soothing texture) Tempering: Not used in Laotian cooking.
🍲 FULL‑POT RECIPE (1 lb mung beans)
Ingredients — Bean Pot
- 1 lb mung beans
- 10–12 cups water
- 1–2 cups dehydrated veg OR 3–4 cups fresh veg (onion, garlic, ginger, greens)
- 1 tsp garlic
- 1 tsp ginger
- 1 tsp white pepper
- Salt to taste
- Optional: squeeze of lime
- Ingredients — Grain Pot
- 5 lb parboiled rice
- 5 lb barley
- 12 cups water
- Salt to taste
Instructions — Full Pot
Pot 1: Khao Piak Bean Soup
- Simmer mung beans 45–60 minutes until soft.
- Add vegetables, garlic, ginger, pepper, and salt.
- Simmer 15–20 minutes until soothing and aromatic.
- Add lime if desired.
Pot 2: Rice + Barley
Simmer 35–40 minutes.
Serve
- Ladle bean soup over rice/barley or serve alongside.
- Add sprouts for brightness.
